Over The Weekend~Sprite Cake? #Baking #Recipes 5 comments


Over the weekend and for fathers day I wanted to make a treat for my family, something on the sweet side but light. So I got the idea of a yellow cake with pineapple and instant pudding as part of the topping for the cake. Here’s how I accomplished it.

Sprite Cake #Recipes #Cakemixes
Ingredients for cake and directions:
1 (18 ounce) box dry cake mix (any flavor)
10 ounces diet soda (any flavor) I used Sprite
2 eggs (slightly beaten, optional but cake stays together better and is fluffier)
Mixing Ingredients:
1. Mix the dry cake mix, diet soda, and egg(s) until well blended.
2. Pour into a 9 X 13 sprayed & floured prepared pan according to directions on box.
3. Bake according to the directions on cake mix box.
Note: If making white cake use only egg whites

When cake is cool spoon pineapple over entire cake and refrigerate

Pudding
Mix instant pudding according to directions on box, chill for about 30 minutes or until set. Spoon instant pudding over the top of the pineapple. Chill until ready to serve

Serve with a dalop of whipped topping and toasted coconut and enjoy!!!
Store remaining cake in refrigerator

This is what you need for this recipe:
1 box yellow, lemon or white cake mix
1 can sprite (take a few sips)
1 package of instant pudding
2 eggs
2 cups milk for pudding
20 oz. can crushed pineapple
1 container favorite whipped topping (I used vanilla flavored Cool Whip)
Toasted coconut for garnish!

    You could take even more fat and calories out of the recipe by mixing the dry sugar free pudding mix with the undrained crushed pineapple Fold in the whipped cream and then put over the top of the cake… Oh and I would use cheesecake flavored pudding. Why use just vanilla when so many flavors are available. Coconut cream flavor would also be amazing, but they don’t make that sugar free yet.
