This “Parmesan Cheese Chips” Recipe is my most Re-pinned photo on Pinterest.
As some of you know I am on a new Health Shape For Life and have been having success in weight loss. To date I have lost 20 pounds and just have 4 pounds to go. For me this is about health as my cholesterol has been high and the weight has been causing me problems with my hips. I have not been able to exercise or even walk for any period of time. So even with the 20 pounds it has made a world of difference. I am also “Sugar Free” which is something I have never been, I have always loved baking, store bought chocolate chip cookies, chips, Cheetos and almost any pastry, so now I am looking for ways to change my eating habits and this little recipe is just one little snack. I have been learning about low carb and gluten free as a way to make further changes to my diet and to help my husband that is type 2 diabetic. To make these “Parmesan Cheese Chips” I used the hard grated cheese from the deli.
What you will need:
Deli Parmesan Cheese (You can use any hard grated cheese you prefer) *regular cheddar, mozzarella would make these rubbery
Seasoning of your choice, I used a bottle of Italian Heb Grinder Seasoning
Parchment paper and a safe microwave plate
1 Tbsp is just the right amount for one chip. Sprinkle 1 tbsp out onto a small piece of parchment and spread thin and evenly. You could even peel them from the parchment while warm and place over a wooden spoon or something round to make them in the shape of a taco for dipping. Great with a salad or soup!
Bake in microwave for approximately 30 seconds (I stop it when where I hear it crackling then restart) Watch them as they can burn, depending on your microwave. All ovens vary.
I have made 2 at a time and that works fine.

You can eat these by themselves or use as a chip to dip in a low cal low carb dip. I like eating them with a salad as I am not eating bread and like something crunchy. They are easy to make on the spur of the moment and would make a nice garnish for salads!

THese little cheese chips are so fun, made in the microwave or oven if you want to make a bunch, so easy and great with salads or cooled over a spoon and filled.
