We have a star home kitchen on tour Oh My Heartsie Girl Week #2A Deightsome Life BlogI know it takes a while for a new blog feature to gain interest, but I am having fun with this one as I get to go inside (through the power of blogs) and share and tour a kitchen  and get to know the person behind the blog and while I am there I always look for a recipe to share. So for my feature this week is a blog I have been visiting for a while and the kitchen of A Delightsome Life a makeover/renovation from a several years ago.

Kathy works part-time, has a passion about crafts, she says, ” she inherited creativity from her mom”, gardening she mentions “she inherited the love of gardening and of cooking from her dad”. a sometime empty-nester, lives in a rural town where you know everyone’s name and have a feeling of belonging and lives in a 100 year old home with some renovation, which is where my story begins.laundry-room-door-left-view A Delightsome Kitchen French Farmhouse

A few months back and in I shared Kathy’s Book Page Leaf Crafts, so it was natural to visit and find her kitchen makeover to share with you.Delightsome French Farmhouse Style Kitchen Renovation

Kathy says in her post about her makeover that much of the inspiration that went into the makeover comes from other bloggers. (Guess thats why we like surfing) She referred to her makeover as they “lived around it”, while she worked part time and had events during the time of renovation. from-swinging-door-straight

There was a lot do to for her renovation the sorting, cleaning, what to get rid of and what to keep. Now for The Recipe and do I have a treat, just a few ingredients and what a beautiful dessert, featured in a her Christmas Cookie Challenge 2013.

Coconut Pistachio Ice

Coconut Pistachio Ice

Have all your ingredients ready. If you can't find super-fine sugar, you can use regular sugar and grind it fine in a food processor or coffee grinder. It will be worth it. Make sure the sugar comes to a complete boil; have your coconut and coloring ready. Work quickly to allow the layers to meld together. Press very firmly each layer, especially the first layer.

Make sure you cut this slowly and carefully when it is completely cooled with a large sharp knife. It can be crumbly - take your time. Do not multiply this recipe. If you wish to make more than one batch, do it separately.

Ingredients

  • 3 3/4 cups super fine sugar
  • 1 1/4 cups coconut milk
  • 1/2 tsp. salt
  • 3 cups dry, unsweetened coconut
  • 2 to 3 drops food coloring (optional)
  • 1/4 cup chopped pistachios

Instructions

  1. Grease an 8-inch square baking tin and line with baking parchment or waxed paper.
  2. Combine the sugar, coconut milk and salt in a heavy pan, stir over medium heat until the sugar has dissolved.
  3. Bring the mixture to the boil. Add the coconut and stir completely with a wooden spoon to combine. Work as quickly as you can from this point as this mixture begins to cool.
  4. Pour 1/2 of the mixture into the prepared baking tin. Press down very firmly. with off-set spatula or small rolling pin.
  5. Divide the remainder into two bowls - a little more in one for the pink/red food color. Stir in food coloring completely. Spoon over first layer, spread and press down very firmly.
  6. Add chopped pistachios and green food coloring stirring completely. Spoon over pink layer, spread and press down, again very firmly. I used a small rolling pin. (Pampered Chef)
  7. Allow to cool completely. Gently lift out of the baking tin by the sides of the parchment paper and place on a cutting board. Cut carefully into squares using a large sharp, thin knife and serve immediately or store in air-tight container.
