So over the weekend we were invited to a party and was ask to bring something and after I posted a feature on Weekends Are Fun a few days ago about lemon bars, I decided I would try the recipe. They lived up to the description in the recipe, and they were luscious, lemony and yummy!!!
Looking over other recipes, I had the option of using powder sugar or glaze and this time I opted for the glaze. The recipe is really basic and for most kitchens, all items in home pantries. I used bottle lemon juice in the filling and fresh juice in the glaze. I grated the lemon peel both fine and course and I must say the recipe has a really zippy taste!!! Nothing better than homemade
My Helpful Hints: I use a technique before I bake the cookie portion of the bars, that is, I lined the bottom of the pan with foil, over lapping the sides to use as handles, once bars are baked. Once they come out of the oven, I spray the sides with Pam so the lemon filling does not stick. I waited until the bars were cool then removed them using the handles, set them on a cookie pan and cut them into squares before drizzling the icing over the top.

Ingredients For Lemon Bars
1/2 C butter
1 1/4 C flour
1/4 C powdered sugar
1 C sugar
2 Tbsp flour
1/2 tsp baking powder
2 eggs, beaten
2 Tbsp lemon juice
grated rind of 1 lemon
3/4 C powdered sugar
lemon juice to make soft glaze
Instructions
1.Mix together butter, flour and powdered sugar and press into 8 x 8 pan lined with tin foil with edges hanging over edge.
2. Bake crust for 15 minutes at 350 degrees.
3. Mix together sugar, flour and baking powder
4. Add in eggs, lemon juice and lemon rind
5. Pour this mixture over baked crust and bake for 20-25 minutes at 350 degrees or until edges are golden brown and mixture is set.
For glaze to drizzle:
Mix together powdered sugar with enough lemon juice to make glaze soft enough to drizzle over lemon bars while they are still warm.
Cool and cut.
