Ingredients

  • 1 c. Sugar
  • 1/2 c. Softened butter
  • 1 Large egg
  • 1 Tbsp. Water
  • 1 1/2 tsp. Vanilla
  • 1/4 tsp. Salt
  • 1/4 tsp. Cinnamon
  • 1/2 tsp Xanthan gum (when using Gluten Free Flour) if not listed in flours ingredient list
  • 2 c.Gluten-free all-purpose flour plus flour for rolling out cookies

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. This is the ideal baking temperature for cookies.
  2. Line baking sheet with parchment paper,set aside.
  3. With electric mixer, cream butter and sugar on medium
  4. When the ingredients are mixed, add the salt, vanilla, cinnamon, and egg. Blend the mixture until all ingredients are incorporated.
  5. Add the xanthan gum and flour if your brand does not have it in the ingredients.
  6. Reduce the speed and mix until ingredients are combined
  7. Once all ingredients are mixed, cover bowl and chill in fridge for at least one hour.
  8. Use parchment paper to roll out cookies top and bottom this way thickness will be consistent. Starting with a bit of flour on bottom sheet.
  9. Use a cookie cutter to cut the dough to your preferred shape and size.
  10. Use parchment paper on baking sheet but dont let cookies touch each other.
  11. Bake for 10 minutes or until edges are barely brown.(watch that first batch) all oven bake different

Refrigerate for one to two hours. You want the dough firm for rolling.

Take the dough from the refrigerator. Roll it on a surface that has been lightly floured with the gluten-free all-purpose flour.

Roll properly until the flour covers the dough.

Use a cookie cutter to cut the dough to your preferred shape and size.

Arrange on the baking sheet you prepared. When arranging, ensure that the dough will not touch each other.

Bake for 10 minutes or until edges are barely brown.
