These Yummy cookies “taste” like macaroon made with oatmeal or an Almond Joy, they are packed with flavor have chunky chocolate chips and are made with almond flour and don’t require refined sugar!! You can use brown sugar in place of palm sugar or coconut sugar. They make a small batch of (12) next time I will double the recipe. They were a huge hit, they wanted more!!

And as you can see I used my “Kitchen-Aid” mixer and do so every chance I have, I love my mixer and even though these cookies can be mixed by hand very easily, I like multitasking while they blend.
I love different kinds of chocolate chip cookies and as some of you know I love reading recipes like a book, (maybe a fixation) but I like seeing what ingredients go into a recipe, helps me decide to make or not. If you use a sugar-free chocolate chip that would be ok too.
Then there are add-ins for cookies and when I saw these had coconut that was the first ingredient, then the fact they use almond meal was next, then palm sugar, that nailed it, I knew I wanted to try this recipe. I am liking recipes that use almond flour and sugar alternatives more and more.
Now I can’t take credit for this recipe I found it on Running With Spoons and while there are many versions out there if you Google it, the original recipe was made with white flour, refined sugar, and shortening and I can tell you these were a big hit at our recent lunch meeting with guests from Mexico and Texas, the wanted more. I promised I would have more when they come again. Update: Since the for mentioned, I have changed up the recipe to make it Gluten Free …. These Almond Joy Cookies Are Gluten-Free!!! When Using Almond Flour and could be sugar-free*
The recipe goes like this, simple to assemble stir and bake:
Almond Joy Cookies
¾ cup old fashioned oats
½ cup almond meal/flour
2 Tbsp. coconut flour
¼ cup unsweetened shredded coconut
½ tsp. baking powder
¼ tsp. salt
¼ cup coconut palm sugar* or Note: Sugar Free recipe below
2 Tbsp. honey
1 egg, lightly beaten
2 Tbsp. coconut oil, melted or room temperature
½ tsp. vanilla extract
¼ cup dark chocolate chunks/chips, Toll House Chunky Chocolate Chips or your favorite sugar-free chips
In a large mixing bowl, combine oats, almond flour, coconut flour, shredded coconut, baking powder, salt, sugar, and honey.
In a smaller mixing bowl, whisk together egg, coconut oil, and vanilla extract. Add to dry ingredients and mix until well combined. Fold in chocolate chips.
Place bowl in the fridge and chill for a minimum of 30 minutes. (I did not chill mine)
When ready to bake, preheat oven to 350º F and line a cookie sheet with parchment paper or a non-stick baking mat. Use a tablespoon to drop cookies onto a baking sheet, pressing down to flatten them slightly.
Bake for 8-10 minutes, or until the edges begin to turn golden brown.
Remove from oven and allow to cool on sheet for ~5 minutes before transferring to a cooling rack to cool completely. Who waits, I like a warm cookie!!

*Did you know you can make your own sugar free brown using xylitol or your favorite sugar free version.
Use 1 tsp of Blackstrap molasses to 1 1/2 cup of sweetener, mix the molasses until all sweetener has a light brown color. 1/2 carb per TBSP serving sugar free brown sugar.

Ingredients

- ½ tsp. vanilla extract
- ¼ cup dark chocolate chunks/chips
Instructions
- In a large mixing bowl, combine oats, almond flour, coconut flour, shredded coconut, baking powder, salt, sugar, and honey.
- In a smaller mixing bowl, whisk together egg, coconut oil, and vanilla extract. Add to dry ingredients and mix until well combined. Fold in chocolate chips.
- Place bowl in fridge and chill for a minimum of 30 minutes. (I baked mine right away)
- When ready to bake, preheat oven to 350F and line a cookie sheet with parchment paper or a non-stick baking mat. I used my cookie scoop and dropped cookies onto baking sheet, pressing down to flatten them slightly. (I didnt press mine down either)
- Bake for 8-10 minutes, or until the edges begin to turn golden brown. (I have to watch as usually things bake way quick)
- Remove from oven and allow to cool on sheet for ~5 minutes before transferring to a cooling rack to cool completely.
