1.     Baked Oatmeal Cups

This recipe does not include flour, so the mixture is held together with a combination of eggs, milk and any kind of fruit puree. Since there is no flour used, you can use gluten-free oats.

Baked oatmeal cups get their signature sweetness from a mix of apple sauce and maple syrup, but you can easily swap them for mashed bananas or any other fruit, and honey or brown sugar, according to your liking. You can also add in dried fruits and nuts like dried blueberries, dried mangoes and walnuts or cashews. These oatmeal cups can also be served with yogurt or cut them up in half and apply a layer of nut butter.

Now here’s the fun part, you can either omit the sugar or add in spices to suit your taste. The possibilities are endless. For the nuts, you can use pistachios, pecans, almonds, etc and for the flavors, vanilla, cinnamon, and nutmeg. You can also mix in dried or fresh blueberries or cranberries.

This recipe is rich in proteins, fiber, magnesium, and many vitamins as it contains quinoa. Fruits and milk also provide proteins, calcium, and phosphorus.
