I wanted to make a treat for my family, something on the sweet side but light. So I got the idea for using a yellow cake mix, pineapple and instant pudding as part of the topping for the cake. Here’s how I make this delicious cake.Lemon Sprite Cake Oh My Heartsie Girl

Ingredients for cake and directions:
1 (18 ounce) box dry cake mix (any flavor)
10 ounces diet soda (any flavor) I used Sprite
Zest of 1 lemon
1/2 tsp lemon flavoring
1 tbsp of fresh lemon juie
2 eggs (slightly beaten, optional but cake holds together, better and is fluffier)
Mixing Ingredients:
1. Mix the dry cake mix, diet soda, flavorings, zest and egg(s) until well blended.
2. Pour into a 9 X 13 sprayed & floured prepared pan according to directions on box.
3. Bake according to the directions on cake mix box.
Note: If making white cake use only egg whites

When cake is cool. spoon pineapple over entire cake and refrigerate

Pudding
Mix instant pudding according to directions on box, chill for about 30 minutes or until set. Spoon instant pudding over the top of the pineapple. Chill until ready to serve

Serve with a dalop of whipped topping and toasted coconut and enjoy!!!
Store remaining cake in refrigerator, tastes great chilled!

This is what you need for this recipe:
1 box yellow, lemon or white cake mix any brand
1 can sprite (take a few sips)
Lemon Zest
Lemon Juice
Flavoring
1 package of lemon instant pudding (to reduce calories you could use fat free/sugar free)
2 eggs
2 cups milk for pudding or according to directions
20 oz. can crushed pineapple
1 container favorite whipped topping (I used vanilla flavored Cool Whip)
Toasted coconut for garnish!
