Minty Squash Garden Salad


2 Small zucchini
2 Small yellow squash
1/3 Cup fresh mint leaves
3 Tablespoons extra virgin olive oil
1 Tablespoon of fresh lemon juice
1/4 Teaspoon sea salt
Sprinkle pepper to taste
1/4 Cup toasted pine nuts

 

First you should thinly slice or shave, if you like, the zucchini and yellow squash. You can easily do this with a mandolin or with a peeler to get it very thin. Place the vegetables in a bowl.
Next you will want to cut the mint leaves into strips by rolling them together, then slicing them into strips. Then add the mint into the bowl with the squash.

 

In a separate bowl, whisk the oil and lemon juice together and then add the salt and pepper as you continue whisking the mixture.

 

Drizzle this dressing over the vegetables in the bowl. Add the toasted pine nuts and then toss together.

 

Allow the mixture to stand for about 10 to 15 minutes to allow the flavors to blend together.

 

Serve in small salad bowls and sprinkle with more toasted pine nuts if desired.
