I am trying something new on Sundays and since I love to feature other bloggers and recipes I decided to do a feature I am calling Sunday Recipe and Featured Kitchen. And here is how it goes; as I visit blogs and we all find interesting ones, I love to see their kitchens and thats where I got the idea to do these features. Dont we all love seeing a kitchen where all the cooking and baking takes place? I thought it would be nice, as I try recipes to also give credit and to include the cooks kitchen!!! So here we go…………..

I am a find-it-try-it baker, I love finding new recipes to try and then tell about them, pretty much a review of what I have baked, a show and tell!!! Favorite recipes I like to try are cookies and while searching for new blogs that offer up recipes, quips, quotes and stories, baking and cooking tips I found A Garden For A House, I also featured in a Wordless Wednesday post back in September Here….. I went backAutumn spice cookies from A Garden For a Home from Kevin Lee Jacobs Kevin has some great recipes, gardening tips and fabulous photos and ladies, you will love him, he cleans house, yes thats right, he offers tips on how he cleans his 187 year old home that was built in 1826 that has been renovated and is beautiful, ( if you have time You must take the tour)  I would love to bake and cook in his kitchen or walk in his gardens. I spend a lot of time on his site and have signed up to receive all his updates.

Sometimes it takes me a while to get to recipe, as I find so many, I print off, date them when I want something good and as the mood hits me, thats when I will chose a recipe to make. Well thats what happened this week I chose and baked these Autumn Spice Cookies……. What or why do we choose a recipe.Autumn Spice Cookies made with molasses, black pepper Why I may choose a recipe: I am drawn to a recipe by the ingredients, like how much sugar, what kind is used, is it grain free, does it use an alternative to flour, how much oil or butter does the recipe call for, how long is the preparation and baking time, how is it stored, oh and the pictures, might be the single most attraction to a recipe. I take all these into consideration as a factor and if I can indulge, I know my family will. As snacks go, some just have to have everything) but I try to be conscious that they dont contain like, 400 calories a cookie or bar, hehe.. And when I can I will reduce the amount of sugar and fat or make substitutions, like using applesauce in place of the fat, or changing the sugar to coconut sugar.

Now for the goodness about this recipe: While I used all ingredients in this recipe the only thing different was I used organic molasses which gives the cookies a much darker appearance than Kevin’s recipe, but thats just color and in my opinion did not change the taste. Family opinion, they loved them as they dont like a cookie that is to sweet, these are crisp like a ginger snap, however, if you like a softer cookie you could put them in a Ziploc bag with a piece of bread and within hours they are soft. Oh and they are wonderful right out of oven, my word, “yumculicious”. So now the recipe is below, I do hope you liked the feature, let me know what you think………..I would love to hear your comments. Autumn Spice Cookies

Autumn Spice Cookies

I made my cookies with an organic molasses, much darker than Grandmas Molasses so they look almost like a chocolate cookie.

These cookies when baked look like a ginger snap, but dont have as much (spicy bite)

Ingredients

  • Autumn Spice Cookies
  • Ingredients for about 3 dozen cookies (when you make 1/2 balls
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • Spices: 1 Tablespoon allspice, 1 teaspoon cinnamon, 1 teaspoon ground black pepper.
  • 12 Tablespoons (1 1/2 sticks) unsalted butter, softened to room-temperature
  • 1 cup sugar
  • 1 egg
  • 1/4 cup molasses (I used organic molasses a much darker color and it made the cookies appearance darker)
  • Extra-fine (sometimes called “super-fine”) granulated sugar * Found here C&H Sugar Baker's Sugar, Pure Cane Ultrafine, 4 Pounds

Instructions

  1. Whisk together all of the dry ingredients except the sugar. In the bowl of a standing mixer (or an electric hand-held one), cream the butter and sugar together. With the mixer running, beat in the molasses and then the egg. Then, with the mixer on low speed, gradually add the dry ingredients, and mix well.
  2. *Cover the mixing bowl with plastic wrap and chill the dough in the fridge for at least one hour.
  3. Scoop up a small amount of dough, then roll it in the palm of your hands to form a 1/2-inch diameter ball. As you work, drop each ball in a plastic bag or paper sack which contains one 1/4 cup super-fine sugar. Shake the bag for a second or two. Set the sugar-coated balls on an ungreased, non-stick cookie sheet. Or, set them on a baking sheet lined with parchment paper or Silpat you can find here Silicone Baking Mat Set
  4. Bake in the pre-heated, 350-degree F oven for 12-15 minutes. Cool on the baking sheet for 15 minutes, then transfer the cookies to a wire rack for further cooling.
  5. When perfectly cool, the cookies will keep for about one week in an air-tight container. Or, freeze the cookies for up to one month.
